Random Ramblings: Christmas Cherry Salad—or Dessert?!

A Rose by Any Other Name…..

When I grew up, the fancy dinners my mom or aunt fixed for birthdays, Christmas or other occasions, often contained salad.  But any preconceived idea you had about what went into a salad would go right out the window.  Instead of a bowl with lettuce, vegetables and dressing, these dinners would often feature a delicious sweet item that seemed like dessert.

As a child, I always found the label confusing, but the “salad” was wonderful.  Here is one such dish that would be good at your table for Christmas or any other time of the year when you want something special.  Even though it is called “salad” it is more like dessert. Whatever you call this, it’s tasty, easy and delicious.  Merry Christmas!

Christmas Cherry Salad*

1 Can of Cherry Pie Filling**

1 Large can of Drained, Crushed Pineapple

1 Can of Eagle Brand Milk

2 Cups Miniature Marshmallows

1 Cup chopped Pecans

1 (8 oz) container of Cool Whip

Mix in order, cover and refrigerate 4 hours or overnight.

*This can be converted to gluten-free making sure the above ingredients are the gluten-free versions.

**I have heard strawberry pie filling can be substituted for the cherry pie filling.
