Teriyaki Pork in a Slow Cooker, Regular or Gluten-Free

This recipe can easily made regular or for gluten-free diets, it is delicious either way & simple to make!

  • 3 cups unsweetened apple juice
  • 7 tablespoons Swerve or Sweetener of choice
  • 6 tablespoons gluten-free coconut aminos or teriyaki sauce (or use full gluten version if not a problem)
  • 3 tablespoons apple vinegar
  • 1 teaspoon ground ginger
  • 1 Tablespoon chopped garlic
  • 1/8 teaspoon pepper
  • 2 carrots peeled and grated
  • 1 boneless pork loin roast, halved
  • ½ cup cornstarch
  • ½ cup tablespoons cold water

Put the half pork roast in a 6-qt. or bigger slow cooker.  Put grated carrots on top.  Sprinkle on Swerve, ginger, chopped garlic, and black pepper.  Over the top, add vinegar, aminos or teriyaki sauce, and apple juice.

Cover with lid and cook on high for 5 hours, or until thermometer registers done AND it is tender.

Mix cornstarch with water until smooth, stir well into crock pot.  Continue cooking until thickened or 45 minutes.

When serving, this pairs well with rice.
