This is good!
- 3/4 cup cornmeal
- 3 1/4 cups Gluten Free Bisquick mix
- ¼ teaspoon Xanthan gum
- 1 cup + 1 Tablespoon real butter, melted
- 3/4 cup Swerve, or sweetener of choice
- 3 Tablespoons apricot spreadable Fruit, warmed in microwave 30 seconds
- 2 cups coconut milk or goat milk
- 2 tablespoons apple cider vinegar
- 3 teaspoons baking soda
- 6 eggs
Mix 1 tablespoon vinegar and milk with a fork and let sit 5 minutes.
Heat oven to 400°. Mix all ingredients, including vinegar and milk mixture, together until smooth. Pour into LIGHTLY oiled 9” x 12” pan. Bake 30 minutes covered, then 20 minutes uncovered and knife inserted in center comes out clean. Cool, cut & serve.
