Easter Quiche Regular or Gluten-Free

Happy Easter celebrating our risen Lord Jesus!

This quiche is delicious for gluten eaters, as well as, those needing gluten free.  It is very easy & wonderful at Easter or anytime!!

  • 6 eggs, beaten
  • 1/2 cup coconut milk or milk of choice
  • 1 chopped onion, sautéed
  • 1 pkg bacon, cooked and crumbled
  • ¼ teaspoon dried Basil or ¼ cup fresh Basil, stemmed & chopped
  • ¼ teaspoon powdered Rosemary
  • ¼ teaspoon Nutmeg
  • ¼ teaspoon ground black pepper
  • ¼ cup Provel Cheese (we like Leo’s)
  • ¼ cup grated Parmesan Cheese
  • 4 teaspoons regular or gluten-free flour
  • One fourth of 10-oz package of chopped spinach, thawed
  • If desired, gluten-free pie shell

Directions:

Preheat oven to 350 degrees F.

Put thawed spinach between paper towels and squeeze liquid out.

In small bowl, add flour and all dry spices.  In larger bowl, add beaten eggs and milk, stir, then add dry ingredients stirring to mix.  Then add sautéed onion, cheeses, spinach, and, if using, fresh basil.

Pour all of it into a gluten free pie crust, if using.  Otherwise, for a crustless quiche, add into a greased or, brushed with oil, pie plate.

Bake for 40 minutes.  Cool a before slicing.
