Mandy is a very transparent author who writes about life as a single woman.  She shares her dreams, hopes, dramas and disappointments.  She talks about the heartache of devoting years of her life to a man, whom she refers to as Mr. E, with whom she had an on-again-off-again relationship.  In many ways it was more like a cat playing with a mouse.

Beautiful Uncertainity God Doesn't Want You To Settle Pink FrameFrom the first page in this volume, you will feel like you have grabbed Mandy’s hand, and become her friend and confidant.  This book is about finding herself, making new memories, taking a different direction in life, and being okay with that.  She is very open about her successes and failures.  Included is her quest to get closer to God.  When working towards that goal, she shares the story of the time she bought, and ate lunch with, The Lord of the Universe.  Experience with her the joy she had in another instance when she bought a simple meal for a homeless man.

Her advice is to concentrate on listening, and building a relationship with, God.  That will get you through all the times of your life–both the good and the bad.  Doing that will give you your ultimate happiness.  God will direct your path, whether that be to continue as a single person, or be in a relationship.  Either way, you will have peace–that peace that Jesus promises His followers.  These things have worked for Mandy, and they will work for you, too.

Imagine being loved without restriction, limit or boundary.  Additionally, nothing you I Love You Written in Wood Free Use - Copyhave ever done, or will do, can cause that love to decrease, or go away.  That love is there for you right now.  The one who loves you like this is God, and it is not based on anything you have ever done.  He will love you deeply even if you never love him back, or accept it.   That is the message in this book:  each of us is loved by God with abandon.

The author uses the story Jesus told about The Prodigal Son to illustrate the love God has for us.  A man had two sons, the younger told the father he wanted his half of the inheritance now, he didn’t want to wait for his dad to die.  Surprisingly, the dad gave it to him, and the son took off for the big city.

The father loved his son.  He had been vigilantly watching for him every day, hoping against hope for his return.  The dad didn’t care what the son had done, or where he had been, he just wanted his son back.  With the son’s return, the only thing the father wanted to  do was lavish his love on him, and rejoice at his homecoming.

The author says that is the same kind of love God has for every one of us.  Even if you have walked away from God, He will always be waiting to shower you with His love on your return.  Just like the father in the story, God will delight in your coming back to him. There is nothing that anyone can do to stop the unending love He has for you.

The author maintains that understanding the depth of God’s love for us will change our lives.  For new Christians, you will be amazed by the love that is available to be poured out on you.  For those who already follow Christ, it will refresh your faith.  There are no favorites with God, His love is available in equal amounts for everyone. Mr. Early fills this book with many ways and examples of how God loves us.  He also suggests that when reading the Bible, keep your thoughts on God’s abundant love, and the Bible will speak to you in a new and deeper way.Love Written on Four Stones Free Use

Get Ready for Some Fun in Your Life

Is there a way to play and read with your child at the same time?  Absolutely!  This book combines Bible stories with activities that are done while a story is being read.  Many may remember singing songs such as “This Little Light of Mine,” while holding an imaginary finger light up in the air, or pretending to cast a fishing line in “I Will Make You Fishers of Men.”  One of the things that made those songs fun was the hand motions that were done while singing.  This book takes that kind of fun to a new level. Child & Adult Walking Silhouette Purple Free Use

The stories in the Bible are timeless, enrich our lives, and are God’s gift to us. He tells us in Deuteronomy 11:18-19 that He wants us to use this gift by knowing what the Bible says, and making sure we pass that knowledge on to our children:

 “So commit yourselves wholeheartedly to these words of mine….Teach them to your children. Talk about them when you are sitting at home, when you are out walking, at bedtime, and before breakfast!”

For many reasons, that isn’t always happening.  With this book, you can change that.  Before you know it, voilà, you have read fifty stories from the Bible, and, you along with your child, had fun while doing it.

One thing I learned from teaching Sunday School for ten years, was to be creative with the stories.  The more imaginative things I did, the more fun and memorable the stories were for my six and seven-year-old students.  This book fits the bill for that perfectly.  These stories are short, beautifully illustrated and include simple, but fun, activities to do while reading them.

I have not seen another book like this one, and it is truly a delight.  It is made well with a padded hardback cover, filled with colorful pictures on every page, and packed with fun.  This volume works just as well for one child, or a group.  Share wonderful Bible stories in a way that will make them memorable, along with making some happy memories for you, and the child in your life.  You will also be giving one of the best gifts you can:  your time.  I highly recommend this 5-star book to anyone with children or grandchildren, as well as, anyone who works with little ones.

Our Spaghetti & Pizza Sauce, Gluten-Free

Spaghetti Sauce, Pasta & Jar Free Use

 

 

 

 

  • 4 — 8 ounce cans Gluten-Free Tomato Sauce
  • 2 Tablespoons Swerve or Sweetener of choice
  • 1 Tablespoon Italian Seasoning
  • 1 Tablespoon dried Basil
  • 1 Tablespoon minced fresh Garlic
  • 2 Tablespoons chopped, fresh Basil, if desired

Spaghetti Sauce Red Over Pasta in Bowl Free Use - Copy - CopyMix all the ingredients together in a sauce pan, including fresh Basil, if desired.   Gently heat until it starts to bubble, watching that it doesn’t scorch, then turn down to simmer for 20 minutes. Stir constantly.

You can add cooked meat balls, stirring in carefully and gently heating until warm.  For a meat sauce, add cooked ground meat, gently heating until warmed throughout. Pizza with Sauce Free Use

Serve over gluten-free pasta, or use this as a pizza sauce on a gluten-free pizza crust.

Can a TV personality actually have anything significant to say about child rearing?  Actually, Korie Robertson can.  She has many insightful things to say from her experience raising her five children.Stong and Kind, Be Kind

As a young mother, Korie was in a Bible study that asked what two character traits she would want to see in her children.  Her answer was strong and kind.  Those aren’t the only two qualities she wanted her family to possess, just the two traits she thought would serve her children well in this sometimes hard and unkind world.

Talk the talk, AND walk the talk.

Korie is quick to point out that the Bible is the primary source both she, and husband Willie, turn to for guidance with their family.  In fact, the Bible is what they look to for every aspect in their lives.  This couple strives to make sure they themselves demonstrate the same traits they are trying to instill in their children.  There is no better example of their importance than for the children to see their parents living out those qualities, especially when it is hard to do.

The author states that both parents must present a united front when training and disciplining their family.  That doesn’t mean they don’t ever disagree with each other, but they save those discussions for times when it is just the two of them.

Strong and Kind PatientThe Robertson’s emphasize that God made each of us with different personalities.  When He entrusts a child to our care, it will be easier for all concerned to work with the style God gave that individual, instead of pushing against it.  This doesn’t mean a child gets a “pass” on learning certain traits, or behaviors.  The expectation is still there, just the way of learning may need to be adjusted for each family member.

Don’t be surprised if a technique that worked wonderfully on one or more of your children, fails miserably with another child.  One family member may respond better to a gentle touch, another responds well to a very regimented approach, and so on.  Know your child, their strong points, as well as, weak ones, and that information will help you plan the best way to teach them.  Parents need to be prepared to discover their child’s personality may be nothing like theirs.  Korie also found child rearing works best when it is geared towards the positive, and not the negative–so accentuate the positive.

Keep your ducks in a row!

Korie found that being flexible in her parenting style, and being willing to switch to a Strong and Kind Joyfuldifferent method when something isn’t working, stood her in good stead many timesShe gave examples about her own children that demonstrate this.  Most of all, make sure your child feels loved by both their parents.  This will go a long way towards making a child feel secure.  So will the knowledge that their parents love each other.

Strong and Kind has lots of great information.  It is not just a “fluffy” book written by a well-known personality.  The ideas the couple used for raising their children make a lot of sense.  I especially like that the family makes the Bible the center of all they do.  Willie added his input in some of the chapters, so it was interesting to hear his take on the different aspects of child training.  I also enjoyed the different stories Korie included about her children, along with contributions from Chrys Howard, Korie’s mom.  The information in this 5-star book is down-to-earth, and very helpful.  I highly recommend it to anyone with children.

Korie is the wife of Willie Robertson, well-known CEO of Duck Commander.  The couple both appear in their family’s hit reality show, Duck Dynasty.

Eggplant Lasagna Gluten-Free

This looks like a lot of work, but it is really worth it!

2 large Eggplants (about 1 ½ pounds each), sliced into thin ¼-inch-thick rounds

 1 tablespoon plus 1 ½ teaspoons Sea Salt, Divided

 2 Large Russet Potatoes, Peeled

 6 tablespoons Extra-Virgin Olive Oil,  Divided

  1 medium Yellow Onion, Chopped

  1 1/2 pounds lean Ground Meat of Choice

  1/2 cup Chicken Broth

  3/4 cup our Gluten-Free Spaghetti Sauce

  1 tablespoon Swerve or Sweetener of choice

    2 tablespoons Chopped Fresh Basil

  ¾ teaspoons Ground Black Pepper

  ¾ cup Gluten-Free Bread crumbs**

   1 recipe Béchamel Sauce (see below)

   ½ cup grated Manchego Sheep Cheese (or Mozzarella)

    2 teaspoons chopped Garlic

   ½ cup Greek (we like all goat milk) Feta, crumbled, if desired

Preheat oven to 400⁰ F.  Line two large baking sheets with foil or unbleached parchment paper. Lightly oil a 9″ x 13″baking pan.Pots & Pans Hanging Free Use - CopyIn a large mixing bowl, toss the eggplant with 1 tablespoon of the salt. Transfer to a large colander, and sprinkle any salt left in the bowl over the top of the eggplant. Set a small plate on top of the eggplant, and put a weight (such as a large can of vegetables) on top of the plate to help squeeze out more water. Set the colander in the sink to drain for 30 minutes.

Meanwhile, boil the potatoes in a large pot of liberally salted water for 13 to 15 minutes. Make sure they are still firm enough to slice without crumbling to pieces. Lift the potatoes out with a slotted spoon, and run under a gentle stream of cold water until cool enough to handle. Slice into ¼ to ½-inch rounds, and set aside.

Rinse the eggplant well, and pat dry with paper towels. Arrange the eggplant slices evenly in 1 layer on the prepared baking sheets. With a large pastry brush, very lightly brush the eggplant with 4 tablespoons of the olive oil. You may not need all of the oil. Bake 15 to 20 minutes, or until lightly browned, flipping the eggplant halfway through baking. Monitor closely so the eggplant does not burn. Remove from oven, and set aside. To make the meat sauce, heat the remaining 2 tablespoons of olive oil in a large stockpot or Dutch oven set over medium-high heat. Add the onion and cook until it is translucent, about 4 to 5 minutes. Add the ground beef, breaking up any large pieces with a spatula or wooden spoon, and cook until the meat is browned, 6 to 7 minutes. Add the chicken broth, spaghetti sauce, fresh parsley, remaining 1 ½ teaspoons of salt, and pepper. Stir to combine well, bring to a boil, reduce heat, and simmer until all the liquid has evaporated, about 10 minutes. Set aside.

To assemble:  Prepare the Béchamel Sauce (see below). Arrange all the sliced potatoes in an even layer at the bottom of the prepared baking pan. Cover the potatoes with half of the eggplant slices, arranged in even rows. Gently spread all of the meat sauce over the top of the eggplant. Top the meat sauce with half of the bread crumbs and half of the cheeses. Cover the bread crumb–cheese layer with the remaining eggplant slices, again arranged in even rows. Top the eggplant with the remaining bread crumbs and cheeses. Pour the Béchamel Sauce evenly over the top of the entire dish.

Bake for 55 to 60 minutes until heated through and the top begins to brown in spots, monitoring closely to ensure the top does not burn. Remove from oven, let cool for 10 minutes, slice, and serve.

**To make bread crumbs:  We save all the heels from the loaves of gluten–free bread.  We keep a zip-lock bag in the freezer, and when we open a loaf, take the heels out, and put them in the freezer bag.  We have them ready when we need them for crumbs.  However, you can use regular slices, too.  Tear slices of bread into at least four pieces.  Put a few pieces at a time into your blender.  With the blender lid on, pulse the bread until crumbs form.

 

Béchamel (BEH-shah-mel) Sauce 

½ cup (1 stick) unsalted Butter
½ cup Gluten-Free Flour
4 cups Hot (not boiling) Goat or Cow Milk
2 Egg Yolks, beaten
½ teaspoon Sea Salt
¼ teaspoon Ground Black Pepper
¼ cup Grated Manchego Sheep Cheese or white Cheese of choice
¼ cup (do not use extra) soft, white Goat Cheese or Cream Cheese

Melt the butter slowly in a medium saucepan over medium-low heat, being careful not burn or brown it. Slowly add the flour, stirring with a wooden spoon, and mix until smooth. Continue to cook for 2 minutes, stirring constantly, until the flour is golden and smells toasty. Do not brown.

Remove from heat, and very slowly pour in the hot milk, stirring constantly. Set the sauce back over medium heat, and simmer while stirring constantly until the sauce is smooth Cooking Pot White Sauce Free Useand thick, about 7 to 10 minutes.

Remove from heat. Temper the egg yolks in a large, heatproof mixing bowl by slowly adding about 1 cup of the hot sauce to them, stirring quickly. Then slowly stir the tempered egg yolks to the milk mixture. If the Béchamel seems too thick at this point, do not panic. Continue to stir and stir, and eventually it will lighten up and become smooth again. Add the salt, pepper, grated sheep cheese, and soft white goat cheese, stirring to combine well. Use immediately.

In Engaging the Competition, by Melissa Jagears:   Bookish, school teacher Harrison finds himself uncomfortably involved with the biggest tomboy in the area, Charlotte.  He hasn’t wanted anything to do with her since they were children.  That is when Charlotte bested Harrison at shooting, in front of all the boys in town, and he has never forgotten it.  He now finds himself too close for comfort with the rough, tough ranch owner Charlotte has become.  These two couldn’t possibly find romance together, or could they?

Somehow love and romance works its way into the relationships of all of these somewhat unlikely couples.  As is the sign of any good work, I was sorry for them to end.  I highly recommend you open up this 5-star book for some rollicking, good tales.

“Red Lobster Like” Cheddar-Bay Biscuits Gluten-Free

Dry Ingredients & Butter Free Use - Copy

This is our version of the “Cheddar-Bay Biscuits” served at Red Lobster. 

  • 2 cups Gluten-Free Bisquick
  • 2/3 cup Milk (we use Goat Milk)
  • 1/2 cup grated Cheddar Cheese (we use Manchego Sheep Cheese)
  • 1/2 cup Butter, melted
  • 4 Tablespoons Olive Oil, divided
  • 1/4 cup plain, Kefir (we use Goat Milk Kefir) or canned milk (Goat or Cow)
  • 1/2 teaspoon chopped Garlic, divided
  • 1/4 teaspoon dry Parsley Flakes
  • 2 pinches Sea Salt

Biscuit Round Edges Free Use

Directions

Heat oven to 450 degrees.

  1. Mix Gluten-Free Bisquick, Parsley Flakes, 1 pinch Sea Salt, 2 tablespoons Olive Oil, Goat Milk, the Kefir, 1/4 teaspoon Garlic and Cheese until a soft dough forms.
  2. Drop by spoonfuls onto an parchment paper covered cookie sheet.
  3. Bake 6-8 minutes or until golden brown.
  4. Mix Butter with 2 tablespoons Olive Oil, 1 pinch Sea Salt and 1/4 teaspoon chopped Garlic.
  5. Brush mixture over warm biscuits before removing from cookie sheet.

These are really good, and even our non-gluten-free eaters love them!  They are best eaten the very day they are made.  Just like all gluten-free “breads,” they dry out rapidly after the first day.  Store them covered tightly in refrigerator or freezer.

Away We Go!

Pull up a chair and get ready for a trip!  With this book, a child can be introduced to Chair Blue Free Usearmchair travel, and go to Hungary.  The author, Ms. Roman, has an extensive series of books she has written about many different countries, all geared towards children.  This book will explore Hungary from a child’s point-of-view and interests.

For example, mommy and daddy are referred to as Anya and Apa, respectively in Hungary.  Grandmas are called Nagy’s.  Popular names for little girls living there are:  Erzse’bet, Suzanna or Judit.  Favorite boy’s names are: Attila, Laszlo and Peter.

While reading the book, children can imagine what it would be like to eat popular Spong Cake Free UseHungarian foods, such as a thick vegetable and meat stew called goulash.  They can decide what they would think of having the traditional red paprika sprinkled in it.  Hungarian children consider it a treat to be served menygyleves, a cherry soup, or the dessert dobos torta, a sponge cake with caramel.

Many interesting geography facts are a part of this book.  After reading it, a child will have learned that Hungary is a landlocked country, and that its largest city Budapest, is actually divided by the Danube River.  Because of that, Buda and Obuda are on one side, and Pest is on the opposite river bank.  Children will learn that popular Hungarian vacations take place at the Caves of Aggtelek–and there are more than seven hundred caves–or The Balaton, a lake that despite its name meaning mud or swamp, is actually quite lovely. Balaton Lake Free Use  Many more interesting Hungarian facts will be found between the pages of this volume.  Information runs the gamut from Hungary’s most popular sport to what kind of money is used there.  This book contains twenty-eight pages, with colored illustrations on at least every other page, and  is geared towards three to eight-year-olds.  It is also interesting and fun to try saying words from the Hungarian language using the pronunciation guide in the back of the book.

Awaken the love of learning about other countries, geography and cultures with this work.  Life is often all about one or two choices we make.  Who knows, the child in your life might become a world explorer because choosing this volume opened the door to that interest for them.  But at the very least, they will understand a bit about life for a child in another country, and so will you!  I recommend this 5-star book to anyone wanting to learn about Hungary–through the eyes of a child.
