Things aren’t always what they seem.  Join Little Mole as he changes from feeling down and sad, to happy and hopeful that spring is on its way.  The world looks bright and cheery after his mother helps him make that delightful discovery.  What looks like a dried-up bulb is surprisingly responsible for a lovely spring flower.  A cocoon that seemed worthless is necessary for an amazing butterfly to emerge after winter ends.

Children will learn not to give up if they have hopeless feelings.  Instead, look at things differently.  Just like Little Mole who felt things were hopeless, they, too, may find clues abound showing spring is on its way.  Take a second look, and don’t be surprised if something beautiful is getting ready to appear.

This hard-backed volume contains charming pictures that show how things look with the light of hope.  By viewing things differently, those sad feelings about winter will disappear. I recommend this 5-star book for its cute story along with the instructions about how to find hope!

A Ticklish Situation!

A young widow, Sylvie Schrock King, with a small child finds herself with a broken-down farm, a horse she dearly loves, and the possibility she might lose it all—and she is Amish.  Additionally, her neighbor, Edith, wants to do everything she can to get rid of her, including enlisting her husband to help her do it.  Things seem to change for the better when she naively hires marriage-shy Jimmy, until Sylvie discovers he is Edith’s son.

Be prepared for some funny situations that will have you grinning ear to ear.   There are also very serious ones that include providing a place mothers can leave unwanted babies—no questions asked—along with homes for the infants.  Subjects run the gamut from disagreeable people, unknown birth parents, and mysterious break-ins. There is even good marital advice along with a great way to get to know someone. It all blends into an amazing tale that I hated to see come to an end. I highly recommend this 5-plus star book to anyone who enjoys well-written, clean stories.

Before their work is complete, it is obvious Baily has also been targeted.  The web of people involved is so large, it might involve the government itself.  As more attempts on lives are made, who can be trusted?  The longer they take to figure it out, the bigger the body count becomes.This clean tale is full of action, thrills and many puzzling crimes with lots of twists and turns—with the one behind it difficult to figure out.  Characters rely on their faith to get them through dangerous situations, along with life itself.  Besides being interesting, the side stories may increase the number on the suspect list.  This 5-star book will be enjoyed by fans of adventurous mysteries and suspense.

From, An Amish Family Christmas, by Leslie Gould

Baked Creamsticks

Creamsticks

1 cup shortening

1 ¼ cups mashed potatoes

1-quart milk, scalded

1 cup sugar

1 tablespoon salt

½ cup warm water

3 packages yeast

6 beaten eggs

11 – 12 cups of flour

Put shortening, potatoes, milk, sugar, and salt in a large bowl.  Stir until shortening and sugar are dissolved.  Put warm water, yeast, and 1 tablespoon sugar in a small bowl.  Add eggs and yeast to first mixture.  Stir in enough flour until dough is not sticky.  Cover and let rise until double.  Roll out dough.  Cut in 1” x 3” strips.  Let rise until double.  Bake at 350° oven for 15 – 20 minutes.  Let set until they are cold.  Cut a slit on top and put in filling.  Then top with favorite icing.

 

Filling

2 cups milk

6 Tablespoons clear-jel*

Pinch salt

2 teaspoons vanilla

2 cups sugar

1 ½ cups Crisco

Combine milk, clear-jel and salt in a saucepan.  Cook until thick.  Add vanilla and cool.  Cream together sugar and Crisco.  Mix with cold cooked mixture and mix well.

*Clear-jel is a thickener that can be found in most bulk food stores.  If you don’t have access to clear-jel, cornstarch is an appropriate substitute.

 

Caramel Icing

½ cup butter

1 cup brown sugar

¼ cup milk

2 cups powdered sugar

Melt butter, add brown sugar and cook over low heat for 2 minutes, stirring.  Add milk and stir until it boils.  Cool.  Add powdered sugar.

Jam Thumbprint Cookies

(My Ben’s Favorite)

1 ½ cups all-purpose flour

¼ cup ground almonds, or commercial almond meal

½ teaspoon baking powder

½ teaspoon salt

¾ cup butter, softened, at room temperature

½ cup sugar

1 teaspoon vanilla

1 egg

Mix flour, ground almonds/almond meal, baking powder, and salt together in a small bowl.  In a medium bowl, cream together butter, sugar, and vanilla.  Beat the egg into the butter/sugar mixture until fluffy.  Add the flour mixture to the butter/sugar mixture and mix well.

Form the dough into 1” balls and place on a cookie sheet lined with parchment paper.  Bake at 350° for 12 minutes, or until the tops of the cookies are no longer shiny.

Remove the cookie sheet from the oven, then quickly and gently press your thumb into each cookie to make a depression.  Put a scant ½ teaspoon of raspberry jam into depression.

Return the cookie sheet to the oven for another 3-5 minutes.  Let the cookies cool for 5-10 minutes, then remove them to a cooling rack.  Makes 2 dozen.

Caramel Christmas Cake

2/3 cup butter, softened

1 1/3 Cup sugar

3 Eggs

2 ¼ cups sifted cake flour

½ tsp. salt

2 tsp baking powder

2/3 cups milk

1 tsp vanilla extract

Cream butter; gradually add sugar, beating until fluffy.  Add eggs, one at a time, beating well after each addition.  Combine flour, salt, and baking powder; add to creamed mixture alternately with milk, beginning and ending with flour mixture.  Stir in vanilla.

Pour batter into two greased and floured 9” round cake pans.  Bake at 350° for 25-30 minutes until a toothpick inserted in the center comes out clean.  Cool in pans for 10 minutes.  Remove from pans and cool completely.

Caramel Frosting

½ cup butter

1 cup firmly packed brown sugar

3 T milk

3 cups powdered sugar

1 tsp vanilla extract

1/3 cup chopped pecans or walnuts

Melt butter in a medium saucepan.  Add brown sugar and cook one minute over low heat.  Stir in remaining ingredients and beat until smooth.  Add more milk if necessary, for proper spreading consistency.  After frosting the cake, sprinkle chopped nuts on top.

“A Pursuit of Home” by Kristi Ann Hunter

 

An Amazing Mystery!

Jess has spent most of her life on the run.  Born in a castle and part of the nobility, she has had to fight for her life since she was a teenager.  She has learned to quickly change her appearance, gather intelligence or defend herself.  At long last, Jess has found a safe place to live anonymously when the unexpected happens:  her brother is alive and he might re-gain the throne.  But only if he has possession of a much-revered heirloom.  Additionally, there is a short time to produce it, or the chance will be lost.

Thus, Jess sets out to solve a complicated mystery that has clues hidden in paintings, whose locations are unknown.  She also finds herself in the uncomfortable position of asking those she would rather not for help.  Jill faces thrills, subterfuge and danger in this amazing mystery.  Just when everything looks like it might have a certain outcome, the story twists again.

This clean story, told from a Christian viewpoint, is so good you will hate for it to end.  You won’t want to put this down! I highly recommend this 5-plus-star book to anyone who enjoys well-written fiction that will keep you guessing, and turning the pages.

“Chocolate Sauce Regular, or Gluten-Free”

Tired of winter?  Has it been cold at your house–possibly with ice or snow, too?  How about a nice treat you can whip up quickly?   Ta-da:  a yummy chocolate sauce.  You can make it gluten-free or regular & add a bright spot to the winter cold!

¾ cup Swerve or 1 cup Sugar

¼ Cup Cocoa Powder or 1/3 Cup Carob Powder

¼ teaspoon Salt

1 Tablespoon Gluten Free (or regular) Flour

1 Cup Boiling Water

2 Tablespoons Butter

1 Vanilla Bean, scraped, or 1 teaspoon vanilla extract

If using a vanilla bean, split it down the center and scrape out the inside.

Mix together sugar, cocoa (or carob), salt and flour.  Stir in boiling water, butter and vanilla scrapings or extract, mixing well.  Cool before serving over ice cream, cake, or dessert of your choice.  Enjoy!

“Diamond in the Rough” by Jen Turano

A Force to be Reckoned With!

Although Poppy was forced to take part in just one season of New York society, her penchant for attracting trouble could make her remembered for years.   Time after time, she finds herself embroiled in activities that shock her genteel grandmother, Viola.  Out of desperation, Viola convinces the very proper British Reginald Blackburn (who is secretly a Duke’s son) to instruct Poppy about the correct way to behave.  Reginald himself is fit to be tied by Poppy since she continues getting into trouble and drags him into it as well.

Many hilarious situations develop, although, some of them unexpectedly turn out to be serious.  In an unforeseen twist, the ending brings together lots of information that hadn’t seemed related.  I loved  that this clean, entertaining tale was told from a Christian perspective.

A good point about how secrets eventually come out was made to Reginald, but applies to others who have secrets in this story. Murray’s characteristics didn’t come together for me (was he originally going to be someone different?), but everything else in this fun tale drew me in.  This 5-star book will be enjoyed by those who like well-written, light-hearted romances of yesteryear–with some unforeseen zigzags.

“Dying to Meet Jesus: How Encountering Heaven Changed My Life” by Randy Kay

The Key to Happiness!

During a health crisis, Randy Kay died and was transported to Heaven where he met Jesus.  That near-death experience (NDE) has changed every minute of his life.  This book focuses on the feelings, strengths and emotions that Randy had as a result his Heavenly encounter.

Although he does give some description of Heaven, the main point of this story is what he received by meeting Jesus.  Any doubts about God’s existence or His being unaware of the hard things Randy was going through, were replaced with rock solid knowledge of God’s reality, and the confidence of the Lord’s hand on his life.

Many trials have come the author and his family since that time.  He has been able to face them all because of the strength and fortitude he received while in Heaven.

Randy uses God’s word in the Bible, along with what he gained in Heaven, to offer hope and encouragement to readers.  His NDE was so precious to him that he did not share it with others for a long time.  Ultimately, he felt God himself was urging him to write this book and include his NDE.  The author agrees with Paul when he said:

“To me, living means having Christ. To die means that I would have more of Him. If I keep on living here in this body, it means that I can lead more people to Christ….” Philippians 1:21-22

I recommend this 5-star book to Christ followers who want hope and help in life, as well as, assurance of a glorious future.

“Snow Leopard: Ghost of the Mountains” by Justin Anderson

The Snow Leopard Revealed!

The large cat, known as the Snow Leopard, lives in the wilds of the rugged Himalayan mountains.  It is so rarely seen that the locals call it the gray ghost.  This is an account based on the author’s attempt to track one down.

Besides the excitement of actually finding this evasive animal, the book contains descriptions of the color and markings of its coat, the number of miles it travels, and the way it hunts.

The leopard’s tale—which is the longest of any cat—is used like a scarf to keep warm during the cold winter snows, as well as, helping the leopard keep its balance when jumping and running.  Its paws, which are enormous, allow the weight of the cat to be spread out so it can walk through deep snow and never sink.True to nature illustrations of the leopard and its environment cover the pages of this over-sized, hard-backed, 5-star book.  This non-fiction volume is full of facts and information that will appeal to grade school, and even older, children who are interested in details about animals and nature.

The author is a zoologist and has done many documentaries about nature and animals in wilderness locations.
