Chicken Wings in an Air Fryer, Gluten Free

2 pounds fresh, not frozen, Chicken Wings

1 Cup Potato Starch

1 Tablespoon Old Bay Seasoning*

2 teaspoons Garlic Powder

½ teaspoon Salt

¼ teaspoon Pepper

3 – 4 Tablespoons TABASCO Sauce**

Olive Oil Spray***

Put chicken wings on a plate and pat them dry with paper towels.  Dispose of the towels.  In a large mixing bowl, add potato starch, salt, pepper, Old Bay Seasoning, and garlic powder.  Mix completely.  Next add the chicken wings, tossing to coat them evenly.   Lightly coat the bottom of air fryer with an Olive Oil sprayer.  Add chicken wings in a single layer.  Lightly spray the wings, passing over them only once, with the olive oil spray. 

Set air fryer at 360° and cook for 35 minutes, or until golden brown.  It is very important that wings are turned every 10 minutes so all the sides get crispy.  Check with meat thermometer to make sure the chicken is done. Take wings out of the air fryer, and put in a different, clean mixing bowl.  We set aside a few to keep them without sauce because we like a few “naked”.  Sprinkle the Tabasco sauce over the top and use tongs to mix the wings so they are coated evenly.  A little sauce goes a long way, so start out with a small amount and work up to the level of heat you like.

Serve and enjoy this very easy alternate to take-out.*We use the mixture blended by our local store, Planters Seed & Spice Co.

**We use McIlhenny Co. TABASCO Brand Buffalo Style Hot Sauce.

***We use a sprayer we fill ourselves with Olive Oil.

 

When working with raw chicken, always keep everything very clean, washing plates, hands, counter-tops and all utensils in hot soapy water.
