Baked Pineapple, Gluten-Free

This is easy & delicious!

¾ stick real unsalted Butter*

4 Eggs, beaten

1 can Pineapple Tidbits, with Juice

1 heaping cup Powdered Swerve or ¾ cup regular Sugar

5 slices large slices of cubed, Gluten-Free Bread, 9 slices if not large

1 Vanilla Bean, split open and scraped out, or 1 teaspoon Vanilla Extract

Dash of Sea Salt

Prepare:

Cream Swerve (or sugar) and butter.  Add the beaten eggs and vanilla scrapings (or extract), and mix well.  Add the pineapple and fold in the bread cubes.

Spread out evenly in a greased 1 ½ quart casserole.

Bake uncovered at 350° F. for 45 minutes, or until nicely brown.

*This must be real Butter.
